#SNACKALICIOUS Gluten Free Corn Nuts


This is a #SNACKALICIOUS recipe that will quell those crunchy, salty cravings. Instead of reaching for a bag of potato chips, why not spend a little time in the kitchen preparing your own salty snack. Corn nuts are a go to for me when I am on the road, or at a LONG REHEARSAL! But why should I pay upwards of $4 for one and a half servings when I can pay $2.50 and make 16 servings -AND be able to control the amount of salt and fat I use. This is an easy and somewhat healthy recipe that you and your family can make at home in a matter of minutes.

Most corn nuts are gluten free, but are made in facilities where that process wheat and other gluten containing products. For someone with a gluten sensitivity, that may not be enough to trigger a reaction. For me, when I am under stress, even trace amounts of gluten trigger brain fog, skin irritations, and intestinal distress.

This is why I decided to try making my own. This is an easy gluten free recipe that you can feel confident will not trigger any reactions except for the pure joy and excitement when you take that first bite and hear that satisfying ~ CRUNCH ~!

Oven Roasted Corn Nuts


  • A large bowl for soaking “Cancha”
  • An oven pre-heated to 400 Degrees
  • A baking sheet pan
  • A swath of parchment paper
  • A spoon for stirring


  • 2 cups of “Cancha” – or dried Giant Whit Corn
  • 4 cups of water for soaking
  • 3 tablespoons of coconut oil (or oil of your choice)
  • Salt to taste

What To Do: Preparation

  • Rinse the “Cancha” and pour it in the large bowl.
  • Pour the 8 cups of water over the “Chancha”.
  • Let the “Cancha” soak 8 – 24 hours.
  • After 8-24 hours, drain the “Cancha”, spread it out in one layer and blot it dry. Let it air dry for another 1-2 hours until dry to the touch.

What To Do: Preparation for Roasting

  • Preheat the oven to 400 degrees.
  • Melt the coconut oil in the microwave or on the stove.
  • Place the “Cancha” in the large bowl and spoon in coconut oil.
  • Stir the “Cancha” so they are thoroughly coated with oil.
  • Salt the coated “Cancha” liberally to taste.
  • Cover the sheet pan with parchment paper and spread the “Cancha” out in one layer.
Spread them out and get them in a 400 degree oven

What to do: Roasting

  • Place the pan in the oven and roast for 30 minutes.
  • After 30 minutes, take them out and stir them around mindful to keep them in one layer.
  • Roast for another 10-20 minutes or until they are golden brown.
